COLD STORAGE HOUSE IS A SYSTEM THAT IS PROVIDED TO ENSURE THAT THE VEGETABLES AND FRUITS, WHICH ARE COLLECTED FROM THE FIELD OR ORCHARD, ARE STORED WITH THE FRESHNESS AND TASTE THEY HAD IN THE BEGINNING, AND ARE TAKEN OUT OF STORAGES AT SUITABLE TIMES AND SUPPLIED ACCORDING TO THEIR MARKET VALUES.

COLD STORAGE HOUSES THAT SHALL BE ESTABLISHED TO STORE FRESH FRUITS AND VEGETABLES MUST HAVE PROJECT DESIGNS THAT MAY SATISFY AFOREMENTIONED OPTIMUM PRESERVATION CONDITIONS, AND MUST BE INSTALLED ACCORDING TO AFOREMENTIONED CRITERIA.

MOST IMPORTANT FACTOR IS THE TEMPERATURE IN PRESERVATION.

NORMAL CHARACTERISTICS OF FRESH FRUITS ARE LOST WHEN THEY ARE DELIVERED TO NATURAL ENVIRONMENTS SINCE THEIR CELL MEMBRANES CRACK WHEN THEY ARE FROZEN.

THEREFORE, FRESH FRUITS AND VEGETABLES MUST BE MAINTAINED ABOVE FREEZING POINTS. THESE TEMPERATURES VARY BETWEEN 1 TO 15 DEGREES.

FRUITS AND VEGETABLES CONTAIN WATER IN THE RATIO OF 80%. HUMIDITY RATE MUST NOT BE ABOVE AFOREMENTIONED DEGREES IN ORDER TO PREVENT LOSS OF WATER.
